Drywall/Texture Help Needed | This Week or Next (Surrey | Fraser Heights)

We're a busy Vancouver-area painting company looking for an experienced drywaller or texture specialist for a small job starting this week.
The Job:
We have a 20 ft. x 15 ft (approx. 350 sq ft) two-car garage ceiling that needs to be either flattened or retextured. (See Attached Images)
The existing texture was wetted and scraped, but some residue remains in the joints that were mudded and the texture won't simply scrape off.
The ceiling now needs to be either flattened or retextured — we're open to your recommendation on which approach makes more sense.
Option A – Flatten/Skim:
Scrape remaining texture residue
Skim coat the joints (texture was unpainted, so likely minimal — possibly one coat)
Sand and prime (we'll handle the painting)
Option B – Retexture:
Simply retexture the entire ceiling to match or achieve a clean, uniform finish.
Site Conditions:
The garage is empty aside from one cabinet, a fridge, and two garage door tracks — all of which just need to be covered/protected. We're also painting the floor, so coordination will be straightforward.
